Revisiting Santa Fe

Ah, cheese flavored fire, what an apropos description. :)

And NM misses you! At least you're able to bring a little bit of it back with you to Boston, in the form of frozen fire.

holy moly this totally cracked me up. last night i was contemplating that very recipe for one of this week's dinner...

of course, i'm a wimp when it comes to fire power in food, and so are my 5 and 3 year olds, so i won't be trying your variation.

LOL! I've had a similar experience. My nephew-in-law has this fantastic, simple recipe for a hominy casserole that was the hit of Thanksgivings every year. One year, I said I'd make it (since they were unable to come). All it consists of is a big can of white hominy, a cup of sour cream, a cup or two of shredded cheddar, a buttered casserole dish, a 350-degree oven until melted through--and a can of green chilies.

That day, I learned the difference between mild green chilies and flaming jalapeños. The hard way.

And it looks absolutely amazing (tummy growling). Now I want that instead of my left-overs for dinner!!

Mmmm, green chile chicken enchiladas... If we ever move from Albuquerque, I'll sure miss chile!

I have to say, I'm a usual lurker, but you're pictures are the best. This picture made me instantly hungry. I love Mexican food. I was in Arizona for three weeks and NEVER had Mexican food. How sad.

That looks SOOOO good. I wonder if I could get good chiles in oregon... Probably not (at least not yet, too early in the season.) I'm sure they wouldn't compare to NM chiles but man, that recipe is calling my name.

Looks very yummy! My brother and his wife are moving to Santa Fe next week from Maryland. Can't wait to visit them!
